How to make simple Almond Milk

I have been enjoying almond milk for myself for about 10 years. My kids and I cannot digest dairy without getting stomach aches, eczema, rashes, and hives. Therefore, homemade almond milk is our next resort to enjoying cereals, cookies, cakes, etc. For example, making almond milk routinely started with our first born in 2020. Adding about four nights a week of soaking almonds.

We first caught on to our daughters sensitivity to dairy with formula on the first week from being born. After, our second born also had the same issue. Therefore, leaving us to almonds as our only hope until we can fix our gut health.

Why you need to try this recipe

Our recipe is simple to make since it contains only a few ingredients. Therefore making everything we use nutritional. To sum up, it is delicious and lightly sweetened with fresh dates, which children can enjoy.

Store bought nut milk contains preservatives and unnecessary ingredients. For example, guar gum, high levels of sodium, and added sugars. As a result, causing stress on our bodies to digest.

We keep it straight forward and on a budget, 2 ingredients you most likely already have on hand, salt and water.

Knowing what you put in your milk gives you a peace of mind. Therefore giving you a sense of control to what you feed your little ones. In addition, it is a healthy alternative to dairy and helps you narrow down on allergic reactions you or your kids may be having.

What you will need

Almonds: Use raw almonds, organic or not. We buy what we can afford. The most nutritional is shelled almonds.
Water: Filtered water is best for digestion.
Natural Sweetener: Fresh dates from a local farmer. Store bought does just fine. We do both. Make sure to pit the dates before blending them.
Salt: sea salt or pink Himalayan salt.
Blender: Any blender, blending time will determine based on your blenders strength. Blending time can therefore be 30 sec. to 2 minutes.
Nut Milk Bag: For straining the almond pulp because it makes it easier for drinking.

Substitutions

  • Raw almonds of any type work well, however, seasoned or baked does not work at all for flavor.
  • For sweetener you can use pretty much anything you feel safe. For example, some sweeteners that work are honey, agave, maple syrup, and vanilla extract. We personally use dates because it helps avoid eczema eruptions.

How to make simple almond milk

Step 1: Soak 1 cup of raw almonds in filtered water and allow them to soak 6-8 hours.

Step 2: Fill up your blender with 6 cups of water.

Step 3: Add to blender the strained almonds, 3-6 pitted dates, and a pinch of salt.

Step 4: Blend for 30 sec. – 2 min.

Step 5: place nut milk bag over a container to strain the milk and squeeze the bag to get the liquid out.

Step 6: Pour your milk into a container with a lid and store in fridge for 2-3 days.

Helpful Tips

-Discard water almonds soaked in and use clean water for the making milk.
-Use a container with a spout for squeezing pulp.
-Store almonds in fridge in an airtight container because that keeps them fresh longer.
-Store dates in an airtight container and store in fridge to keep fresh longer.
-Make your own nut milk bag.

Add on

  • Strawberries: blend with milk after its been strained to make strawberry almond milk.
  • Cocoa/Cacao Powder: blend with already made almond milk. Warm up on stove top to make hot chocolate.

  • pinch salt

Instructions

  • 1. Soak 1 cup of raw almonds for 6-8 hours

    4. Place almonds, dates, and pinch of salt in blender
    5. blend 30 sec. – 2 min. (depending on your blender)
    6. Strain milk in a nut milk bag.
    7. Store in fridge for 2-3 days.

Notes

Optional: Strawberries and or cacao/coco powder to make flavored milk.
